Altengartz Bratwurst Breakfast Scramble
1/4 lb Altengartz Breakfast Links per portion (Approx. 5 links)
2-3 large eggs per person
Fresh vegetables (mushrooms, bell peppers, tomato, onion...etc.)
1/4 cup cheese
Pan-fry the Altengartz Breakfast Links until golden brown on both sides. Remove the sausage and most of the fat from the pan. Slice the sausage into bite-sized pieces and set aside. In the same skillet, sautee all of the vegetables except the tomato over medium heat until the onions are carmelized. Remove the vegetables from the heat and set aside with the sausage. Whisk a mixture of 1/8 cup water or milk, per egg and begin to scramble the mixture in the original skillet. When the eggs are mostly done, add the sausage/vegetable sautee mixture and the diced tomatoes. Toss the ingredients together and allow the whole mixture to cook together until the egg is done. Plate the scamble and topp with grated or sliced cheese. Serve immediately.
